I’ve been searching, but cannot find, anyone making a built-in refrigerator shorter than the nominal 7/0 height.
We are talking about the top-compressor type . . . SubZero, Viking, GE Monogram, etc.
We need a 3/0 width but shorter by a couple inches than the standard finished opening of 84″ +/- 1/2″ that all the above are.

No. Our problem with this owner has been the old standard one . . . communication, or the lack thereof.
We discussed refrig specs early on, and got from him this. "I don't like those shallow-depth fridges. I want, wherever possible, for deep fridges to go into those cabinets. No counter-depth models."
Now remember this. We are not doing the prep work. None of the framing, nor the plumbing rough, nor the electrical rough, nor sheetrock. We just bring in finished stuff and install. But, we measure, do planning, and advise with drawings how to do all the prep.
When we laid out kitchen plans showing all recesses for fridges at 28 and more inches, with 70-inch heights, cabs atop, we got this, "no, I want those fridge types that are tall, like the Viking I have at home."
Complete re-take. Redesign to use fridge specs for high end built-ins, all of which are typically going into an 84" finished opening, with a 24" depth.
We explained. No built-ins are "deep." He acknowledged.
Now we are up against one of the kitchens where mechanical stuff overhead makes max gypboard soffit 84 above finished floor, thus the need for a shorter built-in fridge.
The one Jeff linked me to doesn't meet the owner's needs, in that it is an over-under, and he wants all side by sides.
This is getting exhausting.
