We are having to put a meter/main panel on a pedestal away from the house so the sub feed will be run underground (about 30′) before entering the house and going to the sub panel (a further 30′), a total distance of about 60′. Our sub panel inside the house will be 125amps. The grading isn’t complete so the conduit cannot be put in place yet but the house is ready for sheetrock & siding. Could we run wire from the sub panel to the junction box on the outside wall and then splice the wires from the meter/conduit at a later date. Is it okay to have a splice in the sub feed or must it be a continuous run?
Should I run individual wires (what size & type?) underground from the meter panel in schedule 40 (what size?) to the junction box at the point of entry to the house. From there can I run SER cable (size?) inside the framing to the sub panel?
How deep must the conduit be?

Ask your local BI. Find out what he thinks and then go do it.
You're going to have to have it inspected anyway - why not ask him what he expects to see?

Your local electirc co. has the info you need. They have criteria you must meet and will let you know what is needed.
All the wiring I'm discussing is on the house side of the meter, aren't the electric company only interested in the portion up to the meter?
Yes, after the meter it's only the building and safety department that you have to satisfy.
An accessible box with a splice in it should be acceptable. It's extra complication and expense, but I don't know of anything in the code that would outlaw it. I'd sure try to find a way to avoid it.
If you run aluminum for your feeder, it'll have to be done with anti-oxidant glop and split bolts that are listed for aluminum.
