I am thinking of screwing 1/2 ” soundboard to the existing drywall in my bedroom, for some better sound insulation from the adjoining duplex. Obviously there will be joints to finish; can this stuff be finished with tape and mud like normal drywall? Or do I need to add another layer of drywall on top of the osundboard and finish that? I don’t want to do any demolition at this point, just add a layer of soundproofing.

You're supposed to screw the sound board directly to the studs or a resilient channel and then apply another layer of drywall.
You can also screw directly to the existing drywall another layer of drywall, the added layer will work fine to lower the sound level
