Who knows of a supplier of temporary (easy set up & take down) storage sheds I could run a wood working shop in on a job site, about 10′ x 16′?

How about one of those tent like car ports? Keeps the elements out but not too secure.

There's a brand of accordian-style metal buildings, but dagnabit if I can find the link or the site (I know I'm just using the wrong googlephrase . . . )

I've never heard of one, but that doesn't prove anything. There have been several threads here about using freight containers for shops or storage. Use the Advanced Search button near the top of the index frame on your left. You might also consider an office trailer, available for rent in most cities of any size. They're under Trailers Rent & Lease in my local Yellow Pages.
Saw one of those advertised on TV last night. Think the company was called "pods"..hmm, let me see...

this is a picture of one set up at 'Rhode fest' this past august - they come in different sizes -
Some winters back, I had a large interior trim job. With all the work being done to the home there was no place in the house to setup.....not even a dang garage.
I had thought of the same thing as you, but didn`t have the time to investigate.
I ended up building my own. Nothing fancy....just enough to keep me and my tools warm and dry. Framed up a simple structure using metal studs. Don`t think it took half a day. No cutting involved.....full length studs and trac. Worked out to be about 10' x 20'. Shed roof with ten foot studs on the front wall and eight footers at the rear. Cross braced the heck out of it and draped a few tarps. My torpedo kept it toasty. All tolled, I don`t think it cost me more than two hundred bucks in material.
I had originally planned on reusing it in the future, but had a need for the materials elsewhere before the need for the structure arose again.
Security wasn`t an issue in this case, but that would have to be taken into account in your situation.
