I am going to install some partial sheets of 1/4″ drywall in order to bring two walls even with tile on a shower so that I don’t have to trim 1/4″ off a bunch of tiles. The existing walls are 1/2″ green board. Should I glue or screw the 1/4″ sheets? If I glue it, any suggestions on the type of glue and pattern, and should I use a few screws as well around the perimiter?

It's only MY opinion .....
I would use 1/4" hardibacker, or rhinoboard, or densheild on areas abuting the wet wall, rather than drywall.
In fact, I have fired drywallers trying to use drywall next to bathtubs and showers.

I wondered about using Hardie board for that. Should I just use a skim coat of mud on top of the cement board?
