Plumb is one thing, level is another. I have worked on homes aas much as five inches off level in the floors but all the walls were perfectly plumb

Look for water issues - any drainage under/thru the foundation - look at the condition of the sill, deteriorated wood where it meets rock - look for loose stones or areas where rocks have shifted - cracks in the mortar -
most likely any issue will be due to water - 5' crawlspace is impressive - sounds like an interesting place, how about a picture or two?
