Be a little careful with handling. The ones I've seen haven't been a cross-laminate and have a tendency to split. They'd certainly need regular ply or something as a base. I've used it as a desktop and it's worked well, but I dunno about kitchen counter...
Try contacting these people, they might be able to give some input. A friend of mine has purchased alot from them over the last few years.
