I want to build a barrier free kerdi shower in a new construction. My idea is to slope the shower area and install the kerdi drain during the slab pour. Then at shower construction time apply kerdi to the sloped slab shower floor and walls, then tile. It seems to me that sloping during the pour will save the step of creating a mud bed. Am I thinking correctly on this?

I would depress the slab 3+" in the bath area and do a traditional sloped mud bed on top. This way, you'll have much more control over the slope and a full thickness slab underneath it all.
