My parents-in-law are looking at a company/product called Bath Fitter for their two upstairs bathrooms. They claim a one day install, cover over your old walls and tub.
I’m not sure how these companies work, is this an OK product or pure crapulance?

My neighbors used a competitor company. I thought their end result looked really nice, and it has held up for 4-5 years now.
The knock against them is that they are just covering up problems, so to speak. So, if your wall is deteriorated and crumbling, it is going to be deteriorated and crumbling with a shiny layer of vinyl over it. But, if the walls are sound, I think it is a very unobtrusive way of updating a bathroom in a short period, for pretty short money. It's not as nice as a full renovation, but at 20% of the cost, you probably get at least 50% of the value.
