Bathroom vented into plumbing vent ??
I have a bathroom in the center of house that it’s vent fan is vented thru ridge vent. Last winter had water in duct freeze at bend. Looking to improve situation, it’s 20 feet to outside wall, or 7′ straight up to roof, not to keen on putting another hole in roof. The 3″ plumbing vent is real close and looks like all I would need to do is add a tee and duct it right into it. Has anyone ever done this ? Would there be a chance of smell coming back through fan?

Yeah - a real good chance. Codes do not permit this for good reason.
The vent fan should have it's own roof penetration so it vents to daylight rather than "close" to some other outlet where the moisture can stay in the attic.

Forget the plumbing vent; if you didn't run the fan 24/7/365 your house would smell like the inside of a septic tank in short order. I assume that's not what you had in mind....
If the run to the outside wall is parallel to the joists, that might be the easier route to take. If it is perpendicular to them, it'll be easier to go up through the roof. The best job will involve sufficient demolition to install rigid galvanised ducts or flexible aluminum; if that's not something you want to deal with, you can try to snake some plastic 'Slinky' duct.
