We are putting an addition over a garage. The edge of the existing slab needs to be beefed-up (replaced?) to support the new load above. I’m sure this has never been done. What is the best way to do this?

it's called underpining and your engineer will call out the details, locations, etc. of the suplementation depending upon your soils report and designed loads. there is very little for you to do at this stage other than choosing a qualified engineer and architect.
your engineer could have a few options...
a grade beam
load bearing posts where only the post pier has to be placed... and the post will carry most of the load
just a couple options to ask about... i usually design what i believe will work often designed around materials i have or have access to then ask the engineer 'Will this work" usually i have overkill in my design but i can usually do mine faster & cheaper... i always ask
