Is it advisable/normal to to add blocking between studs for kitchen cabinets. I’m thinking 2×6 for the upper cabs and I can probably get away with 2×4 blocking between the studs for the lower cabs

It sure isn't normal around here but is a good practice. It gives you a good surface to attach to however your cabinet layout works out.
I also like to install a band of 1/2 plywood in bathrooms that covers the walls from 24-50" so towel bars can be mounter anywhere any future resident may choose
Yeah it's not necessary but good practice. I prefer to hang cabinets on a french cleat- 3/4 ply cut at a 45, one slides over the other.
