Is there a rule of thumb for which size brick jointer or pointing tool to use (the offset, different size on each end, convex for concave joints kind)? Do pros carry a variety of sizes, or do everything with one, and if so, what’s the commonly used size? Thanks.

When we do horizontal surface brick laying, as in a sidealk or patio, we're pretty anal with brick layout so that we don't have to have a "ripped" brick as the last in a course. If the run is long enough, there's always enough play to tighten the joints up or make them fatter. This means we may have to use a different sized pointer.
But if we're talking the same tool, it's small and cheap. So buy a couple that give a nice finish to joinst varying from 3/8" to 5/8"+. And even if you only had the fattest pointer, it only means on tighter joints, the mortar would be less concave and flatter.
