I’m looking for some advice on building an A type gable stick roof over a [portion of my deck. The structure will not attach to the home and will be freestanding on 6×6 supports. In order to get a catherdal type ceiling on the inside how and where should the rafters be supported?

By cathedral I don't know if you are trying to eliminate collar ties. If you are not you can build a header from post to post along the eave line, where the rafters seat, then as a rule of thumb you can come down two thirds the total rise (from seat to ridge) and install collar ties. If you are trying to avoid collar ties you need to post your ridge. For this you have to run a header around the total perimeter of your enclosure. On the gable ends run a post from the header to the ridge this will eliminate the need for collar ties. The rafters will seat on the eave the same in both cases.
