I think you'll get a truckload more responses to this over at Knots.
*Mack, what material are you using? I've seen some hardwood plys that have very attractive "B" sides,and we've one supplier who can give A-A in both 1/2 and 3/4.
*I usually use a 3/4 or so applied end (edgeband the front edge), screwed from the inside. You can make the end flush with the front edge of the cabinet, or extend it 7/8" or so so it ends flush with the front of the door, your choice.I used to veneer the gable (hit and miss), and I've also used 1/4 material (still do when space is tight, but it's hard to edgeband). The full thickness applied end, or raised panel applied end, works well.

*If it's a stock cabinet [store bought] and is of face frame construction it probably has at least a 1/4" scribe/ear extending past the side of the cabinet. Dealers usually offer prefinished 1/4" plywood to match the cabinetry which can be glued and braded on, the scribe/ear hides the front edge of the plywood.If its frameless do as Adrian suggested, use edgebanded plywood or a raised panel door that matches the rest of your doors, screwed on from inside.If this is older existing cabinetry you will probably have to match the original finish.Chuck
