sheetrock is nowhere to be found so I’d like to try plastering an addition I’m building. I’ve done some stucco work and have 26 years of carpentry. Anybody have any recommendations, tips or ideas? Mixtures, quantities, applying thoughts would all be helpful.

God bless ya. I have often marveled at the art of plastering in todays age of drywall. I have limited knowledge of the how-to-do-its of plastering. Wish I could be of more help.
There is a product called "perolite" (i think thats right) that I use for patching old lath walls but seems it would be pricy for a whole room job.

*Wow, I've not heard of someone turning to plaster as an alternative to drywall for availability reasons.Be prepared for much much more labor and significantly more expensive materials. If you can get "blueboard" by some fluke -- it's drywall with special paper to adhere plaster -- you can do a "veneer plaster" job. Otherwise you'll have to put up metal or wood lath, apply scratch, brown and finish coats. With your stucco experience I'm sure you could do it easily.Please check back with your results. If you'd like to trade information about stuccoing I'll tell you everything I've learned about plastering the hard way. It's not that difficult, but it is definitely hard to do fast and well.
