I’d like to put down prefinished 3 1/4 strip Maple flooring, but have seen some good questions posted here about what keeps liquids out of the cracks. Is it possible to apply a final sealer coat over everything? Or am I just asking for trouble?

i'll bite,why buy prefinish if you don't have confidence in the product, buy unfinished,sand and poly and all the cracks will be sealed until next winter when you turn your heat on then the cracks open up!
thing is if someone spills a drink or something on either one, wipe it up and go on with life.it will be fine.
i'd get a nailer out and start laying the prefinish and hang a towel rack close. larry

Doing so will void any finish warranty you may have with the manufacturer. Even site finished floors are not immune to water seepage as the changes in Rh(seasons) will cause the floor to expand and contract. You may not see it but it does happen unless the Rh within the home is kept rigidly constant(not common in most homes)
That settles it, I'm going to suggest the prefinished. No dust for the homeowner during the sanding/finishing. And I can install it myself (I've installed some regular hardwood ie about 2000 sq ft, just never finished it)

If this is a nail down or glue down the individual strips will separate as the weather changes.
That said I have seen recommendation for prefinished CORK flooring that suggested that you put an other coat of the same finish. But that is much different that the UV cured finish systems used on prefinished hardwood floors.
