I am building a two story house with 2 bathrooms over the living room and dining room. I don’t want to interupt our dinners with the sound of water sloshing down the drain above. So, I plan on using 3″ cast iron for the waste stacks in the wall to the crawl space but wonder how far “up stream” I need to use cast iron.

I have PVC horizontal lines and you can hear them. Wish I had iron put in.
might as well as go all the way...
insulate with foam while yer at it or put them in a sound wall... or all three..
Life is not a journey to the grave with the intention of arriving safely in a pretty and well preserved body, but rather to skid in broadside, thoroughly used up, totally worn out, and loudly proclaiming
WOW!!! What a Ride!
You need to start right at the fixture and carry the cast through the living area. You will STILL hear a flushing toilet, but at a greatly reduced sound level. Sound batt insulation doesn't help much; I can vouch for that. Next time, I would use spray foam all around the cast as well.

Contact a supplier who handles commercial grade materials (metal studs, drywall, etc.) They sell a sound deadening batt material that is design to go in between metal studs. The batts are 4' long and dense..
We use them in commercial offices where privacy is key...work great...
