I was hoping that you guys could help me out.
I want to box in steel fence posts with cedar, and hide the attachment of the stringers to the posts. Whats the best options you guys have found?.
The fence will only be 5 Ft high, but it is to be a privacy type fence. Also any pictures you might have would be great.

Can't tell what you're trying to hide at the stringer joint, but no problem as to attaching -- use Teks screws. They have a tip that looks just like the tip of a twist drill. Just make sure the drilling tip is longer than the wall thickness of your posts -- they come in different tip lengths.
For a simple, butted box, make the two narrow sides about 3/16” wider than the post, and screw one (that would probably be one of the sides) tight, splitting the overhang of that board equally, front and back.
Pre-assemble the other three sides into a U, slip them around the post, and assemble the whole unit. Make sure you allow at least 1/8” clearance to allow for shrinkage. If the steel is out of plumb, you can tip the boards, even ripping them wider first, to make it all perfect.

I'd specify stainless steel Teks screws to avoid cedar stains. -t
I've done much like Aitchkay but I made a 4 sided box and slipped it over the post. Make boxes oversized and screw from opposing sides to plumb box.
I toe screw with stainless steel finish screws to attach stringers.
