I am hoping for some help in finding a clear sealer for outdoor vertical cedar shakes. I am trying to find something that will help the shakes keep their original color and not darken or get gray.

UV rays win but look at Flood products
Nothing will keep em' from changing color. Try a bleaching oil/stain you like. Cabot's make nice ones.

I agree that Cabot is the frugal man's quality alternative to Sikkens for this type of application. The cheaper alternative would be an Olympic product.
I use TWP shingle oil. It is a lot of work but dip them and let them dry before installation if possible.
I've been using Defy original with great results. I cleaned, brightened and coated my own place a couple of years ago and it still looks new, despite being 26 yrs. old. I'm guessing a re-coat in 5-6 yrs.

There are a lot of factors that effect how long any coating will last. What goes for my place may be different at your's. I think this is the third year for me and there isn't any change in the look. I used the clear which imparts an amber tone. Time will tell but 5-6 yrs. before a recoat would be what I expect. The pic is when it was freshly done. I've used dozens of different products over the years, not just on my own house. I know many others that have also used a wide variety of products, Sikkens, Penofin, CWF, Pratt & Lambert, Timberoil, the list goes on. For me, the Defy Original has worked better than anything since penta was banned. Defy makes other products and colors. I've only used the Original.Beat it to fit / Paint it to match
