I have a loft home with two ceiling fans attached to the ridge beam about 25′ up. They are wired both on the same circuit. I want to use a variable speed control, as they are too high up for using the pull chain. The problem is that they hum at lower speeds. Does anyone make a fan control for multiple fans that doesn’t cause hum?

You can buy after-market radio control units that fit into the casing, and use a remote that controls the speed and lights. See'em at HD and Lowes all the time.
And if you set the dip switches the same, one remote will control both fans.
The problem is that these two fan are way up on the ridge beam, and remote units require batteries in the receivers. Getting up there to change batteries would be a real ordeal. Even installing the units up there would be a problem.
The units attached to the fans (receivers) are hard wired and do not take batteries. The remote (transmitter) uses batteries. Think garage door opener.Pete Duffy, Handyman
