Occasionally I’ll see a thread suggesting using shop vacs and some sort of relay arrangement as a cost-effective alternative to central vacuum systems.
Can someone provide some detail and suggestions regarding the relay, contactors etc. required for this? What kind of contactors would be required/ where would they be available?

An X10 outlet and a wireless remote transmitter/receiver should be all you need (aside from the pipes, outlets, hose/wand/nozzle, etc).
Of course, if you buy outlets with built-in switches, then you can use a relay. You just need something like a furnace transformer and some sort of suitable relay/contactor -- whatever your local supply house has in the way of an enclosed 24V relay with appropriately rated contacts.
