I’m going to be extending a clay tile roof. I have zero experience with them. Most likely, I’m going to mimic the existing roof but I’d like to know what is considered good practice. That way, if the existing roof is done wrong, I can make the necessary adjustments and do it right.
I’ll probably be using a sub that has experience in Clays but…what should I be looking for?

Most clay tile is almost infinately re-usable as long as it's not broken. Is it barrel or "S" tile? Nailed or set in mortar? Why do you suspect it's not installed correctly?
I'm guessing you have a fair amount of tile in Austin. Should be some good installers there if that's so.

I don't really suspect it's done wrong. I just don't have any basis of knowledge about what a good installation is vs an average vs a substandard one.Should there be strapping? Five layers of felt? Should there be strapping?
Depends on the brand. Some has lugs on the back that hang on strapping. Some nails to the deck. I'm not familiar with the tile you've pictured.

Once again, most of this stuff is proprietary except the valleys. I can't imagine using asphalt with tile.

You are going to find regional differences with installations. Best bet , google up some local Tile Roofing Manufactures and look for installation guidelines. Monier used to be big down there, but my guess is there are a bunch of manufacturers, a trip to a roofing outlet should also get you information. Yes to both felt and strapping, nails are often used in high wind areas, lugged tiles quite often are simply hung off the strapping .
Here venting used to be done simply by cutting a vent hole in the roof sheathing and then with the strapping installed the roof "breathed" through the open spaces where the tile lapped. Check your rafter/truss loads , tile is heavy.
Ice and water shouldn't be needed , specially in your area where freeze is uncommon.

Probably isn't. Or if it is, it's with some kind of strip/continuous vent in the soffit. But, none is far more common.
That looks like one of the factory-made semi-S tiles--profile probably looks like a "P" with a lip to engage the next tile. Even odds on being mortar-set and nailed, or just nail-set (those factory tiles ar more forgiving than "plain" terra cotta, so you can get good set with just roofing nails).
Now, how to get a decent clay-tile roofer? Take the "consumer" approach, ask for references, ask for addresses, so you can go look. Ask about remodel/addition work, too. Direcciones par antereres trabjados, por favor (which is probably horribly misspelt and poor diction, too) might be helpful.
May need a good hand at this just to know what the addition is tying into--battens on solid dek a bit different than flat deck or any of the versions of tile that can be found (my fave was the 2x6 "skip sheathing").

Gotcha.
Plan review may come back with questions about attic venting, that's why I asked. I never "won" one, but a remodel project next door to one I did get, CoA had them install the square mushroom vents--not functional mind you, but installed, so "attic ventilation" could be ticked off the review. Keep Austin Wierd (even before the t-shirts came out).
Shingle iron can be very handy when you go to get a sample tile, too. Not a bad idea while you are there on the ladder to take some photos of the edge/drip details, to help set what the thickness of the intersection of old work to new work will be like. This can be a bear with tile roofs. Every so often, I suspect the "fun/joy" of tile roofs is why some much remo work seems to abut on a gable wall of some size, just to keep it simple.Occupational hazard of my occupation not being around (sorry Bubba)
