connection between chimney and drywall
What is the best way to fill the uneven gap between an interior unfinished wall and a chimney? The chimney is no longer being used and the client wants to keep it for the look. Can I just spray foam the gap that varies from 1/4″ to 11/2′ and use setting type joint compound to cover? How about mortar type mix? Should I worry about movement between the brick and the drywall? Thanks!

That's some variation.
Usually I would either flat tape the uneven area between drywall and brick............
or
Use "L"-bead, to run a straight line. (much more rigid than what you can do with tape).
With either, you'll need to bring the gap to the surface of the wallboard.
If you elect to flat tape, backfill the hollow area. Staple a strip of paper tape next to the brick (straight and maybe even) , then use a scribe to mark the brick outline. Take scissors or use a sharp utility knife to cut that contour shape.
Now you'll need to run masking tape down the brick to protect from mud slop (uniess the brick will be painted).
Mud up the drywall, imbed the tape as close as you can to the edge of the brick. Mud up till finished, lightly sand.
Cut the masking tape at the now finished drywall (cutting on the brick) and peel away.
I'd think the L metal/bead would work Fill the gap ... nothing, silicone, or grout in shallow to leave a reveal.
