I am designing a new kitchen. I would like to have two standard wall ovens. To avoid using too much space on ovens, I am thinking of making one of the ovens a combination microwave/convection, so that I do not need a seperate microwave in addition to the two ovens. However, I am concerned that the convection oven will not truly be a substitute for a standard oven. To those who have cooked with the convection oven, do you consider it interchangeable with a conventional oven, or is it more of a specialty item?

Since you haven't got any replies but mine, you may want to try asking at either or both of two places-- Cooks Talk or even Breaktime. They're found at the top of this page in the green box---click on "Breaktime" or click on "more" after "Other Taunton Forums:" and it will give you other choices, including "Cooks Talk.".

Our over-the-range microwave is also a convection oven. We've only used the convection feature for things like rolls, pizza, and other convenience-food kind of things, but it works fine. It needs to be preheated like a regular oven, and you can only choose temperatures in 25 degree increments. On the plus side, it doesn't heat up the kitchen the way the main oven does. We never tried to cook, say, a roast in it, but the book says you can. I think it would be fine for a second oven if you are just going to use it as backup when you're entertaining or to cook small things where you don't want to heat up a big oven.
Hi - our son picked up a countertop convection [second hand] and I haven't used the 'regular' oven since. We have one in town and one at the cottage, I cook the Christmas turkey in it - my only complaint is that regular size cookie sheets don't fit and it bugs me making two batches instead of one. Have been using convection ovens for the past 6 years, saves time and energy $$$.
I did the same thing. I ordered the electrolux ICON series Speed Queen. They are currently running a rebate of $100. (I bought the ICON complete kitchen series for a total rebate of $850) Don't know how it will work. As you know they are quite expensive. I did see an interesting alternative which was a SHARP microwave/convection oven/toaster. Yes a microwave that toasts. I had no idea such a thing existed. All for the price of $125 at Best. They also had an additional model for about $80 dollars but it was sold out online. I seem to use that toaster oven a lot. The nice feature of the Speed Queen was the self cleaning. Toaster ovens are tough to keep clean as they are used several times a day in my house.
