Quick question: when cutting baseboard with a profile I always cope the joint, but when the baseboard is square or with a very slight round over should I miter the inside joints or not? I am thinking not as the miter will open whereas a tight square cut won’t.

With a square section and a small round-over a coped joint never looks right. I miter the top as far as the bottom of the round then cope the remainder -- it looks right and doesn't shrink open.
