Copper flashing with western red cedar
Planned to use 16oz copper for step flashing of sidewall of dormer covered in beveled western red cedar as well as a sill pan with an apron for a new window I will be installing. I read the “oils” in the cedar will cause failure of the copper. Would lead coated copper work? If I shouldn’t use copper what would be your recommendation? Aluminum .024, galvanized, stainless.

I would use either lead coated or Freedom Gray- a terne coated copper with no lead.
Shy away from galvanized and aluminum.
Is the cedar to be left unfinished? If it's stained or painted, no problem. If not, you'd be better off with LCC or FG as Walter noted, but we use 16 oz CU regularly around here with cedar. It'll last as long as the roof (unless the roof is slate or tile) and I'm not a fan of re-using flashings in any case. New roof-new flash. I would watch where you nail your siding so no nails penetrate the flashings, so they can be replaced with minimum carpentry work.
