I am currently designing a cottage in Ontario, Canada near Georgian Bay.
I want to use a 7/8″ corrugated metal siding (galvalume) on the exterior.
Does anybody know of a good source to find some interesting architectural details
(i.e. window/door openings, connections at seams, corners etc…) other than the standard manufacturers details?

I just custom fabricated a house worth of those pieces. The corrugated metal was used for soffit and some of the siding. You'll probably need some one locally that does custom fabrication to make what you need.
Using corrugated for siding is kind of a random use of the material and I'd doubt much if any trim is available off the shelf.

I'd say corrugated metal siding is more commonly used as siding than roofing now. Look at any architectural magazine like Dwell. In the last few years it's become the siding of choice for most new modernist designs. My supplier carries a range of trims for both the 7/8" or 1 1/2" profiles. I've never had to order anything custom.
On its own it can be a bit much, but it contrasts beautifully with stained wood and surprisingly, painted Hardiplank. For ideas of unconventional detailing a Google Image search of Grandville Island might be helpful.

Some of the earlier buildings at Grandville Island - architects offices and boatyards - done in the late 80s when Po-Mo still held sway were a bit more playful, with metal facades detailed as though they were peeling away from the building. I thought they might provide some inspiration. Norm Hotson also recently did a housing development called Railyards in Victoria which is worth a look.

I get my siding through Slegg Building Supplies. Where it really comes from I'm afraid I don't know. It is a standard 7/8" corrugated Galvalum. Didn't know there was more than one profile for corrugated. They have a generic corner piece, drip flashing for the bottom and J trim for the top and sides. That's all I've ever needed.

One of the favorites for corrugated metal siding used by architectural firms is Centria. They have a pdf detail library that might suit your needs (may require a little digging):
