It would seem the crown molding would not fit tight with texture paint on the ceiling.

You putting popcorn texture on the ceiling? I didn't think anybody did that anymore.
If you can get by with installing the crown first it wouldn't be a bad idea, its not that difficult to mask off.
If you do have to run the crown after the texture you might do some prep before hand, mask off the area where the crown will go and peel it off after the spraying. Have to make sure that you make nice strait lines other wise it might show up.

It can be done after, but its much more work to make it look good.

Old house with new addition. Old part has a small texture to it. It's either remove all the old finish and try it make it look smooth or apply texture to all of it.
