I have a dining room table that has a white fiberglass top. I need a product that will “cure” it to protect it from getting stained and scratched. Any ideas about what product or process I should use?

Take it to a body shop, one that does corvettes. Have them prep and paint it however you like. Even flames, if that suits your decor! If they know their stuff they can tell you all about enamels, laquers and epoxy paints and there's no limit to the color choices. Perhaps a clear coat on top of it all.
Years ago I worked in a body shop and we'd occasionally get similar jobs. No biggie.
