In case you aren't kidding...forget about cutting the trusses, period. Drop a soffit at the room perimeter and -voila!- you have a tray with no roof collapse.

you could call a local truss company or an engineer to look at the problem and see what could be done.

What you're asking is possible, but not very practical.
Assuming your customer wants to go forward with this, the first thing to do is contact the truss company who made them. See if they can recommend an engineer that will design a repair.
If you can't talk to the truss company who built them, try talking to any other truss company. They should know an engineer who will be familiar with trusses and will have a fair idea about how to proceed. (Any engineer could probably do it, but an engineer who works with trusses regularly will be able to do it faster and probably cheaper)
What it takes to accomplish this will depend on your roof pitch, design loading, lumber grade and species, and just exactly how the customer wants the tray ceiling to look.
But in general, you're looking at supporting the existing trusses while they're cut, adding a bunch of new pieces, then covering it all with a truckload of nails, plywood, and glue. It will be an expensive, difficult, time consuming mess.

Bill suggested what would be the most economical solution - Just frame the tray down. It will probably cost 10-20% of what it would to cut into the trusses.
