Tell the wife it’s her problem. She should have checked all the dimensions before ordering. Tell her to authorize a change order for the extra work required to install the customer-ordered parts. Then start looking for a new place to live.

First off, this happens all the time. If it was my problem I'd switch the hardware to fit the doors. Why? Becuase the hardware is lighter.
Is your wife set on the hardware? That happens a lot too. It's just a door knob. Find door knobs that fit the door and that she likes.
Let's see you find all the handleset hardware that is designed for that "standard" 3-5/8" bore spacing.
Whose "standard" is it?
Did you order the steel doors "pre-drilled" for hardware? If not, take 'em back and exchange them for single bored units. The jamb prep is more critical than the lock prep on the doors. The wife did nothing wrong here except for buying a handleset she liked.
I would ask DW to return the locksets and choose something to fit. Or visa versa, return the doors. I would NOT drill and fill, for a number of good reasons.
