Do I undercut the jamb as well for floor

Installing new hardwood flooring. Am I only supposed to undercut the casing or the door jambs as well ?

You can just undercut the casings, but I think it's easier when you undercut the jambs too.
That way you don't have to fit the flooring tight to the jambs. Just slide it underneath.
Ditto, plus you have to respect the expansion space. Most hardwood manufacturers recommend up to 1/2" or 3/4" expansion space at every vertical contact. If the trim won't cover it, you'll want to allow the room needed to avoid potential problems. But, then, I'm from the "better safe than sorry" school.

The casing and the jambs but if the hardwood is ending at that door I usually just undercut the casing and butt into the jambs. The transition is centered in the middle of the door.

If your base is already set and you're using shoe: undercut maybe a half or 3/4's of an inch of the base (next to the casing) as well. Run your floor under there and notch back around the base. Keeps you covered on where you end the shoe mould.
