The weight of the jacks an the roofing and the drywall will create too
much of aload for a single valley rafter.

I haven't given it a whole lot of thought, but it seems like a short span on the valley, doubling wouldn't hurt it seems. I'm more concerned with the doubled header that the dormer ridges hang from. They seem a little funky to me. Basically it looks like 60% of that side of the roof is supported by 2 pairs of rafters. Or am I wrong?
I do like the nantucket dormer though, you don't see a lot of them. Might try to incorporate it into some upcoming projects, but I'll have to give some thought to the frame.
