I’ve got a large pile of drywall ‘scraps’ left over from doing the upstairs of my house. Mostly stuff that’s 2×3 to 3×5 in size, stuff I hate to throw away. Here’s my idea – my basement walls are ICF’s with the plastic ‘studs’ every 6″. I was thinking of taking all the scraps (a mix of regular drywall, greenboard and blueboard) and randomly attaching them to the ICF walls so that it’s like a patchwork quilt of drywall pieces. I’d try to keep gaps to a minimum. Since I don’t believe that the ICF/concrete wall will shrink or expand at any rate differently than the drywall, I could tape the gaps with fiber tape, and put a skim coat of setting compound or D-mix over the entire wall. Uses up my scraps and I don’t have to buy more drywall.

Sure it will work. The drawback is that it's a lot of labor and a lot of mud.
If you have edges that aren't well secured to the foam blocks you might want to consider glueing the rock onto the wall.
I used to do a lot of remodeling in the 70s and 80s. You'd be amazed at what can be put together with glue, rock, fast set mud and sheetrock mud.
I guess a lot of folks haven't patched damaged rentals with glue, orange juice cans and mud. < G >
