I had to put new drywall on my ceiling by myself. Here is the trick I used.
You need four sticks with long nails through them, like this

Nail all 4 up to the rafters an inch or two out from where you want the long sides of the drywall. Two should be swiveled ‘in’ and the opposite 2 should be swiveled parallel. Lift the drywall up and rest one edge on the two ‘in’ sticks, then swivel the 2 parallel sticks in. The sheet will hang there just below the rafters. You can adjust it to exactly where you want it and then screw it to the rafters.
Next to the wall, you just put nails in the wall an inch down from the ceiling to hold that side.
