Directly on the brick or furred out?
Directly on block, I have used construction adhesive and nailed the board to it with cased hardened nails used to install wall amgle for drop ceiling.
On brick it would be a little more problematic because you would need to hit the mortar joints with the nails. You may also run into more out of plane brick, which could make the board wavey, and difficult to fasten and finish.
I would not use a vapor barrier. It would prohibit the bonding of the board to the brick.
The pins used for drop ceiling wall angle have small heads, and with the right touch can be set just like a drywall nail, without breaking the paper. Use them sparingly and they will hold enough for the glue to set. In stubburn spots you may need to strap the board with a 1x and use tapcons until the glue sets.

None. The exterior facing brick and mortar are the vapor barrier. You can insulate between furring if you want.

The vapor barrier would probably retain more moisture than it would prevent in that application.
