I’m attempting to replace a bathroom ventilation fan in an upstairs bathroom. I have access through the attic.
When I placed the new fan and laid things out, the existing electrical cable comes up short (because the connection is on the opposite side of the new fan). The easiest solution, it seems to me, is to place a junction box where the cable ends and splice in a short run to the new fan.
Is this acceptable? Is there a better solution? Fishing an entire new run might be possible, but its certainly going to be a big pain in the rear.

Yes, just keep the box accessible.
Like Sharpblade said, just keep it accessable ( and that does not mean super easy accessable, just where a reasonable person could find it). For future troubleshooting I would take a Sharpie and make note in fan housing and switch box.
Yeah, it's fine so long as the box is accessible from the attic, and the attic's accessible. (Doesn't have to be easy to get into the attic, just possible without chopping a hole in the ceiling.)
Mount the box above any insulation, though, so you don't have to dig through insulation to get at it. Not sure if it's code, but it's good practice.
