I just went through this. DO NOT let them hard trowel it. You need to have a porous surface for the epoxy to grab, any sort of hard trowel will close the pores. The best is a broom finish, but if you want a smoother texture, then just have them hit it with the bull float. Trust me, you do not want to have to go back and grind the entire slab, don't ask how I know....
