I am renovating a 1923 Sears cottage in upstate NY. It has no insulation in the walls. Can a foam insulation be installed between the studs without stripping off the wall covering, and if so, are there different types of products.

Check out blown in fiberglass. Small holes are drilled high and low, insulation is blown in, and the holes are then either patched or covered with a "push" cap.
Better to use cellulous than FG. Has better R per inch and is made from recycled matterial. See http://www.regalind.com/cellulosevsfiberglass.htm
