I have a lot of soffit framing to do in a future project, and the attached pic shows how I have done it in the past, using 2x4s and 7/16 OSB.
We ladder-frame the bottom, nail a continuous cleat to the ceiling, either directly or to cats if we are paralleling joists, and then spike everything up using the OSB as the hanger.
If you are a steel stud and track fancier and user, tell me how you would do it with steel. If possible, sketch it.

Basically you would frame it just like you described with wood except you will be using sheetrock instead of osb for shear. Ladder frame the face and bottoms, attach to rafters and studs, plumb and line.
It's just that easy :-)

But take a look at my sketch. Let's say we use track where the 2x4s are linear to the soffit, and c-studs where the "ladder" 2x4s are.
What do we use as a temporary brace or hanger to tie the ceiling track to the ladder front, before we screw on the sheetrock?
You might think of this.
Make up half a ladder with 1-5/8's stud and one pc of track, track on one side only. Hang that to a line on the joists or blocking. Use same or bit heavier angle, (available from the same steel stud supplier) to fasten the bottom of the studs to, leveled to a line or laser as you go. Mount another pc of track to wall at desired height. Connect the front of the frame to that track with more stud. I've found making up a ladder out of track on the ground oftentimes needs adjustment to make it right once it's up. If you want to "ground do it", I'd recommend you assemble in a jig of sorts (at plate line) to keep everything the same.
