I have a pair of interior french doors from my wife’s, moms house. They are quite old. My wife wants to use them in her office.
one is 29 1/2″ (w) and the other 29 3/4″ (w)
What width should I make the frame?

59 5/8" inside header measurement.
That's the total width of the doors plus 1/8 + 1/8 + 1/8
For interior doors that should do fine.

Unless you will be wanting to use a T-astragal or a meeting bead

I hadn't thought of that.
Actually prefer not to.But now you have me thinking: how do I want the door(s) to stay shut, open etc.

Then I'd reduce that to 59-1/2" and plan the wide door to get the reveal (3/32" after paint is what I'd go with) you need between the doors. This will help balance out the styles of both doors.
