The only thing I could answer about a woman and her "project" would be paint.
Everytime its painting a room. Go to the big boxes and check out the women in the paint sections.

I had to take a stab at it, my wife is just tickled that we finally live in a finished house that I doubt she'd ask for any improvements/remodeling, she'd be afraid it'd be like the last 19 years! and she's probably right

For me it is: Other. My home is an older one and my #1 problem with this and other older places I've lived in is closets. They are small, poorly designed, and did I mention they are small?

We like the clothes up off the floor and out of the corners so we can see all the nice woodwork that our big, strong, handsome menfolk put in!
Since you left out walk in closets, dressing rooms, sewing rooms, garden rooms, hydro therapy rooms, workout rooms, meditation areas and master bedroom suites, I suspect you are not a woman. My politically incorrect butt would be in a sling if I chose kitchen, laundry or dining rooms. Basements are out, my SO gets frustrated trying to run the remote controls in the media center, since the master bath needs cleaning, I'll opt for the outdoor living space. That's where us guys do most of the cooking and Mom is free to sip her favorite refreshment. Of course, I have the wrong answer no matter which one I picked. There is no way any of us men will ever know what's first on a woman's mind, except that it isn't what's on ours.

We have seven parrots and DW wants a dedicated bird room....cool project....I've got it all drawn out.....but it takes time and money. Right now, I have the money but not the time because I'm buried doing other DW wishlists for clients who are looking for peace of mind.
Since I do mostly custom homes, the priority, from my experience, is not so much specific rooms (those are pre-decided with the Archy) but paint schemes, tile layouts, bath and shower layouts, plumbing fixtures, light fixtures, etc. Drives me nuts sometimes....makes me grateful for my plumber who has the patience of Job!
Some of my customers would go for all of the above, with exception of a garage thing. That would be a man's answer.
I had to answer kitchen only because it seems like the favorite of my last two women customers. Dressing rooms and master bedroom suites are #2, I believe.
My own wife would go for a hot tub, sauna kind of deal.

I know far more guys who are foodies and freaks for designer kitchens than gals.
Kitchen is still the most often used room in the house. After a while it gets tired looking and worn out from all the constant use..... naturally the bathroom is next on the list due to all the time spent in the ....ahem... kitchen :)
My wife couldn't make up her mind.
Does that count as an answer?
What my wife wants most is a swimming pool. But of the things on your list, it's the kitchen. Most of all, she wants it opened up to the dining area/family room.
