I am limited by height restriction to 12 ft walls on a 24 x 44 shop build. I need to have a 12 ft high garage door what is the best way to accomplish this? scissor truss, plylam truss?

Put the door on a gable end wall. If you use a standard truss with fill for the gable end you won't need a header. Use a roll up garage door in the first truss bay so that it is recessed into the "attic" space.
A 12' door won't go in a 12' wall. Most garage doors need about 12" to make the turn from vertical to horizontal.
I meant the industrial kind that rolls up into a cylinder.
I agree with Mike Mahan the industrial roll up door recessed in the "attic" space should work for you. https://garagedoorleawood.com/
I just got a call back from a truss manufacture they build a truss with a step in it that the garage door and tracks will run in, this is for a gable end door so first 6 trusses would be these. Another option is using sips panels and free span 14 ft to a timber truss.
Barn doors. Or, there are various types of accordion-style doors.
My spring just came unwound. Best to get the most simple mechanism you can find and not look at the price
