I am installing a new gas stove in my house and was wondering what the best or average length is for flex connector would be?
Is there a set length like 5 ft that I need to look for? Is a certain clearance behind the stove needed that would require any certain lengths?

5 feet sounds way to long .the less kinks the better when pushing it back against the wall.unless maybe your connection is starting right at the floor.It really depends on how much room you need to get your hands with a wrench back there.But I'm no plumber so I guess see what one would have to say.
Not a plumber here but I have hooked up a number of Propane stoves.
Look for the shortest length that allows you to make the connections without undo difficulty.
5' is as long as I have ever seen them personally. I usually have had 30"-36" work for me.
As mentioned above too much length causes problems with kinking when you slide a stove in.
As Dove noted you want is as short as possible.
Gas flex's are restrictive to the flow of gas, not usually a big deal but if it's a long run & multiple things demanding gas, it will cut down on flame out put.
Are there any better manufacturers in gas line connectors than another?

No paticular brand comes to mind, but the ones that have a coating over the metal ( yellow or gray) are less likely to get pinched closed by an oops.

Use 3'- 4' Wardflex and allow for as much as 3"-4" behind for the regulator clearance.
