My kitchen floor is getting laid tomorrow, 3/4″ solid fir (to match the rest of the house). The other floors were originally painted dark brown where there wasn’t carpeting, but I don’t want that. I’d like an oil finish, like watco, but thinking maybe in a kitchen poly would be better.

You could use the watco first to get some penetration and depthj to the finish, thenm top coat with a film-forming material for durability.
