I usually allow an overhang equal to the thickness of the stone. This is if I am to apply a simple bullnose edge. If I am going to build up a more elaborate edge profile, I go up to 2".
*Like most finishing touches, it depends...One of the things it depends on is the room's lighting. What I did when doing my kitchen was to make a mock up top and slide it forward and back until my wife was satisfied with where the top's shadow would land on the drawer front. A bit indulgent, I suppose, but these are the things we do for love.
