I am planning to install random width 3/4″ red oak flooring in 4, 6, 8, and 10 inch widths. I am going to shiplap the edges and then screw and peg the floor to secure it to the subfloor. Is there any reason not to install it this way?

If this is what you want go for it.
You might want to glue the wider ones. Lots of shrinkage potential. also squeak potential, maybe wax the horizontal surfaces of the shiplaps.

I agree with mrt.use glue as it will provide a moisture barrier and help control movement.Invest in (or borrow from your lumberyard) a hydrometer to test the moisture content of your material.try to get the m.c. to about (8%?) or less.
