I have a siding project complete, and have one coat of stain on the new siding. I realize it will be hard to match the grayed 10 year old existing siding, but does anyone have any suggestions to speed the process, or at least tone it down, so it doesn’t look quite so different?
I got a suggestion of using a vinegar/steel wool mixture

Are you saying that the existing siding has weathered into a gray that you want to match?
If so, you may have messed up by putting anything on the new siding yet.
The graying is caused by the old siding oxidizing. You can use bleaches to oxidize/weather new woods to match old, but I'm not sure that they will work correctly now that stain on it.
The original wood has 2 coats of Red Cedar Penofin applied 8 and 10 years ago. The darkening appears to me to be age, and mildew. This is rough sawn cedar. 3/4" thick.
You can see by the picture I attached.
