I’m in the process of replacing rotted-out bathroom subfloor (1/2 in. ply), but both long walls were built between parallel-running joists – leaving me with an 8-in. void along 2 walls with nothing to secure new subfloor to (3/4 in. ply).
I’m planning to cut back to wall plates and use joist hangers underneath the 2 outside walls (gotta love the palm-nailer!) to add blocking – is this my best bet? Does the blocking have to be the same size as the joists (I have some plumbing/electrical I need to avoid (ie: can I use 2×6/hangers on a 2×10 joist?).
I know I can’t be the first to experience this — please let me know if you have any ideas/suggestions/similar experiences.

If I'm reading you right
the walls were just framed on top of the subfloor with no joists underneath? And you want to add short blocking between pairs of joists to nail the new subfloor to?
The blocking is just carrrying the wall load and a little bit of floor and only spanning 14-1/2", you can use anything you want. 2x4 or 2x6 would be fine. I'd slap the glue to it when I put it in just to avoid any possibility of squeaking, although that shouldn't be too much of a problem that close to a wall.
